The best way to get acquainted with the Spanish cuisine is to make a nice variety of tapas appetizers. Tapas are the most stylish food of the day – those are delicious, salty snacks in Spain served with wine or beer, while among friends. The idea of tapas is the best characterized with the following phrase – “eat drinking, drink eating”. The area of tapas origin is Andalusia. The story goes that initially tapas were a simple slice of bread used to cover a glass of wine to prevent gnats from falling into the drink. As time went by, there was some slice of ham, sausage, cheese, olives, tomatoes, anchovies, and other salty delicacies put on the slice of bread – and so tapas were created!

The district of Andalusia is one of those contributing vastly to the establishment of the common Spanish cuisine. The typical soup particularly in summer is gazpacho. The basic recipe is consistently simple – some tomato juice or paste with chopped vegetables, being replenished with crushed ice depending on the degree of heat outdoors

Each region of this state has its own favourite cookery traditions, as for instance, in the North they are fond of rice with poultry or fish. Therefore also this dish is served also nowadays using grown and prepared in Latvia foodstuffs

During this period Latvia got acquainted with the brought from America potato and it became an exceptionally substantial food for our nation

Its taste and smell is just fantastic and cannot be found elsewhere in the world. Furthermore, the peculiarity of the brown bread is such, that it can be consumed as a supplement for sweet so salty dishes. Therefore, as time went by, there was created a Latvian national sweet dish – brown bread layered-desert
